Thanks Ken for having put me on the way.
The problem is more general than just for Nano or Joe.
CTRL+key didn't work at all.
Even CTRL+C on the bash prompt wasn't working.
showkey -s was producing nothing on my LFS system but was producing well
with LiveCD.
In fact, I found that the problem was lying in page 231 of LFS 6.1 book.
At least for my Dell keyboard, this is not good at all to execute the
loadkey command so as to have the keymap fr-latin9 compiled into the kernel.
I compiled again the kernel without doing this command and all works
perfectly now.
In the /etc/sysconfig/console file, I have the line KEYMAP="fr-latin9".
I've just discovered that I'm not the only one that reported this bug. See :
http://archives.linuxfromscratch.org/mail-archives/lfs-support/2005-January/025877.html
Maybe would be good to report this bug to the LFS book team.

Hello,
I have installed LFS 6.1 with no problem on my PC.
Then I installed nano as described in BLFS 6.1
But then I discovered that the CTRL key was't working in Nano.
I've not much idea about this, but does the key work with 'showkey' ?
If it doesn't, it is probably a kernel issue.
