The only limitation is your imagination and knowledge of the tools you are working with. Mailman supports a person hiding their name from the subscriber list (generally only useful if the list admin allows anyone to view the subscriber list). See if mailman's default subscription page can be modded to allow that to be one of the selections presented to people upon subscribing. This presupposes, though, that you will use mailman's subscribe page or at least get ideas from them.
