If I remember correctly, that's the responsibility of the
desktop-file-utils package - running "update-desktop-database" looks
through .desktop files installed by applications, to create a mapping of
Mime types to supporting applications.

One caution - it assumes the files are in /usr/share/applications by
default, so may be a little more complicated if you have Gnome installed
elsewhere (e.g /opt). If that's your situation, I can't help further,
since I have everything in /usr.
