I keep the lfs sources in /sources and the blfs sources in /usr/src. I have all the lfs tarballs and patches in one directory, but the blfs packages get a separate subdirectory for each package. I also have a separate partition for /usr/src so I can mount it on different builds. That's more important for blfs. That's just what I do.
