That's not true. You do need those packages to build GNOME. 
NetworkManager is not just "network manager". It also provides dynamic 
libraries which are NECESARY for full GNOME, thus it is recommended if 
installing GNOME. Same for Evolution Data Server. It's not just meant 
for Evolution, but also for other stuff. You can always do minimal 
build, but please don't complain here if something goes wrong. The 
instructions in the book are made so that whole GNOME (including the 
shell) can be installed and work flawlesly.

As for Linux PAM, use 1.1.6. Same instructions apply. Check BLFS trac 
(bug ticket) for link to 1.1.6.
