LLVM is needed if you want to build Radeon 3D drivers - r300 and r600 
gallium drivers.

If you don't have AMD hardware or you don't need 3D on them I guess 
you're good to go

Also, I think that Mesa takes up much more space than llvm ... On my 
machine llvm 3.2 svn takes arround 150 MB of space while Mesa takes 
arround 320 MB including all components (libGL, libEGL, libOpenVG, 
libOsMesa, libOpenCL, libwayland-egl all DRI, Gallium and pipe drivers 
for OpenCL and GBM).
