FWIW, know that PITA.  So what I've done in building LFS is made a
script for getting into the chroot properly so I can build in multiple
sessions easily.  Of course, I keep all my build scripts around on my
/usr/local/src/scripts.  And of course, I want to use my own Grub.  Now,
to get control back from a distro bent on world domination, I find my
chroot script, get back into my own system, rerun grub-install, and
make my own stanza to boot the other distro.
