Generally, *opening* the files as .txt is ok, and the font is the
monospace in my default template.

My default is Liberation Serif.

For this one (DejaVu Serif) what
I would do (if I had not already done it) would be to save as odt
and then change the font to DejaVu Serif for the whole document.

Did that.  The change was virtually instantaneous.

Mostly, I can do two or three separate files (maybe more) before it
starts to take 100% CPU (only 100%, i.e. just one core).  Of course,
several of the files I created were *much* bigger - particularly for
CJK fonts.

Not sure how to do that.  I only have the one file.
