I've installed Cyrus SASL and OpenLDAP. For Postfix, what
should I use instead of OpenSSL?
Wrong question.  You should add the CCARGS and AUXLIBS shown for
OpenLDAP to those for SASL and ssl which are already in the commands
you are querying.

Alternatively, should I even be installing Postfix? I'm
doing it now because it was necessary for several programs
to work properly when I last built LFS 2 1/2 years ago.

Works fine for me.  But if you built LFS and BLFS 2½ years ago, not
a lot has changed in the overall details of postfix.

Do you experts suggest another mail program?

I'm not an expert, postfix works ok for me (but finding all the
right settings can be an interesting exercise, some of what google
turns up is old and out of date).

But I have no idea what you are using LFS/BLFS for - the needs of a
home user or tiny home network are different from the needs of a
large site: postfix covers both, but to me OpenLDAP is primarily for
large sites.
