That built, but is terminally broken as a result (non-UTF-8 locale, so gnome-terminal will not start, and also broken because although the static IP address on eth0 is still apparently used, it cannot connect even to my local network). I blame most of that on NetworkManager which has no place on my wired-only machines :) AFAICS, both gnumeric and abiword are working. I then went back to my backup from before building gnome, with firefox, seamonkey and xfce, and built epiphany which did not take long (most of the deps had already been pulled in). With that, 'Web Browser' works, although like much of gnome I find it not to my taste. For the future, I'll maybe look at trying to tune NetworkManager, and if so, building blocaled (only, ideally) while the system is booted - everything else so far in sysv seems to build adequately in chroot, although perhaps systemd might be different.
