Hello Patricia. Regarding that message, it started appearing as soon as I loaded Jaws 8 but I think it has more to do with Internet Explorer 7 than it does with Jaws. Jaws 8 picks up the notice easily.
In answer to your question, e-mail is available in several forms. The most commonly used is "Unicode" but there are others. Some people prefer the messages in HTML format which is, I believe, another option. I have always clicked on Unicode as my choice and so far, I haven't had a problem.
