I am not sure if that could be done with .gif format, but ABBYY Fine
Reader can open some picture formats such as jpg. When you open the picture
with Fine Reader, go to read all pages, and then save as, where you can
choos a text format for your new text file. The text could have spelling
errors, especialy if you choose the rong language in the options menu, so
you must know in which language is the text you have in the picture, then
make sure that it is selected in the options, and then convert the text.
