Microsoft Access is a database program. Here's an example of what Access can be used for. In my work as a pastor I want to keep track of thousands of references for sermon illustrations, articles and subjects in books that I have read. My son created a custom data base in MS Access that allows me to record thousands of references according to topic and verses of the Bible, so that I can search for them and find them quickly.
You can also keep records on names and addresses that can be merged into word documents or into mailing labels. Chris, you should be able to set up a database into which you enter information in a way that it can be sorted for analysis. Beyond that, I don't know the details of how to do more than the two examples above.
