Word 2007 actually works very well with JAWS 10.
As chris mentions, there is a learning curve, which takes time, but here
are some thoughts.
First, the specific items you mention:
To change fonts use Alt O, F, which will bring up the fonts window.
For line spacing, Highlight the text you want to change and use Control 2
for double space, Control 1 will bring you back to single space.

Some folks like the add ons, but I find the ribbon menus work quite well,
and as I learn the hotkeys, it all works very well. 
Begin by taking time when you aren't under pressure to get things done to
explore the ribbon menus.
As you find commands there that you will use, JAWS will announce the
hotkey commands to get there.
Record those in a document.  In this document you will then record all
the commands that you think you might use.  Then when you need to do
something like print an envelope or add bullets, you will be able to open
this document for quick reference.
Also, note that some commands are the same as under previous Word
versions:
Alt T, S brings up the spell checker.
Alt O, C brings up the column menu
I foundn that I adapted to Word 2007 rather quickly.
