That's how I delete my favorites too.
But I haven't sorted them or put them into folders. I can just press the
first letter of the name of the one I want to go to and I'm there.

To remove a favorite, highlight it, press application key, press D for
delete, enter, press Y for yes and it's gone.
It's easier to sort your favorites than to organize them.
To organize them, you should probably create different folders for
different categories, then you'd have to move the favorites into the
folders .
Sorting favorites is another option in applications.
As I always say, explore all menus to see what they're all about. As long
as you don't save any changes, you'll just see all options available to
you as a learning experience.
