I think some of but not all of the keyboard shortcuts which used to be available on the menu bar still work.
In relation to restoring the menu bar, as far I am aware this is only available as a third party add on for about £30. If anybody knows how to do this for free I would be very interested as I know quite a lot of people who loathe and hate the ribbons in 2007 and want their menus back.
