Most email software can just save messages into text files...
For example, in outlook express, if a message is open, file menu, save as,
tab to files of type drop down, and arrow down to text files.

Once the document is converted, hit the ALT key. You will hear a list of
options, one of which is save as text. Click on that option and give the
document a file name and save it.
