In Thunderbird you start typing and auto complete fills in as you type.
When the name you want is displayed you press ENTER.
Now start typing the second name and press ENTER when you are satisfied.
Repeat the steps for each recipient.

An alternative approach is to use the contact side bar when composing the message.

CTRL+N to open a new message.
Press F9 to open the contacts side bar.
Shift-TAB until you land in your contacts list.
Use CTRL+Space to select non-contiguous names.
When you are done tab to the To button, tab again for CC and once more for bcc and activate the one you want with the space bar. You can also just press alt+A to add selected names to the To field, alt+D for CC and alt+B for Bcc.

Press F9 if you want to close the contacts side bar or just leave it there to use it the next time.
