Do you mean how to set a piece of software to be the default that gets used to open a type of file?

If so, then right click on an example file, open open with... submenu, arrow up once to the menu item that lets you choose from a list of programs, possibly browse for one that's not in either part of the list (one part is those already linked to a file type, and the other part is all the other software registered as installed or something like that), then tab over to make this the default program checkbox, check it with space bar, and tab over to, and hit space bar on Ok button.
