HI, To restart over yes you would have to delete and reinstall. Wish there was a way to start over from the main menu. But make sure you have no iCloud backup for it to grab.
What you will have to do is unlock new items for quests to appear. So like you did 5 million logs. Now unlock timber or buy farm to unlock grain. The game mostly ends when you totally upgrade your estate to full. Thin that is level 14 or 15. Last time I did that quite early and then continued till I had nothing left to complete for quests.
