Oh, it's like that all the time here.. when it comes to the grille  or
cooking, I bring it on!  Here's some of the stuff I like to make..  friends
have asked for a menu in the past, so I finally decided to throw  one
together..
 
Thai Plate:  Stir fried pad thai noodles with shrimp, various sauces,  snap
peas, baby corn, bamboo shoots, broccoli, fresh Thai basil, water  chestnuts,
Serrano peppers, and sweet peppers.  Chicken satay beaten  flat and skewered,
marinated in cumin, garlic, coriander, ginger, fish sauce,  curry, turmeric
and coconut milk broiled 'till tender and served with a sweet  and spicy
peanut sauce.  Silver noodle salad with glass noodles, ground  chicken
breast, sliced purple onion, cilantro, mint leaves, lime juice, and  chilés
on a bed of lettuce.  Side of spicy cucumber salad made with  seeded and
sliced cucumber, rice vinegar, sugar, mint, hot chilé, and  cilantro.
 
Sopas:  Beef roast slow simmered in the crock pot with fresh garlic,  tomato
sauce, onion, parsley, celery, rosé wine, allspice, cumin, bay leaves,  green
cabbage quarters, etc. served over a sourdough bread slice topped with  mint
leaves.  This one will leave your jaw muscles aching for more.  =o)
 
Jim's Spaghetti:  Sauce made from scratch including fresh tomatoes,  roasted
garlic, ground beef, hot Italian sauce, sautéed mushrooms, Italian  herbs,
onion, burgundy wine, etc. served with sliced sourdough bread buttered  and
topped with garlic salt and mozzarella cheese broiled until toasty.
 
Skewered Teriyaki and Garlic Black Bean Prawns on skewers covered  with
sesame seeds and Jasmine rice.
 
Carnitas:  White corn tortillas warmed and slightly crisped on cast  iron,
filled with your choice of sautéed shrimp, shredded roast pork, or  grilled
chicken or steak and freshly prepared Pico de Gallo (diced white  onion, Roma
tomatoes, Jalapeños, Cilantro, and lime) and topped with Tapatío  hot sauce.
Served with refried beans and our very own Spanish Rice prepared  from
roasted tomatoes, sautéed onion, Jalapeños, Cilantro, delicious  Mexican
spices, and Jasmine rice.  Sides of red and green tomatillo  sauces (grille
roasted tomatillos, garlic cloves, chilé de arbol &  japones, salt, and a
splash of white vinegar).
 
Mexican Meatball Soup:  A delicious Mexican-style soup with beef &  tomato
stock, fresh onion, stewed tomatoes, red chilies, peppers, Cilantro,  and
meatballs topped with freshly grated (but, you have to grate it..  otherwise,
I throw in the whole block.. lol kiddin', of course) Jalapeño Jack  cheese
and tortilla strips.  Served with a slotted spoon (Hey, we can  make a little
game of it.. ;o)
 
Orange Brandy Chicken: Boneless chicken fillets simmered and glazed in  a
tangy, sweet orange brandy sauce served over egg noodle pasta.
 
Garlic Pasta n' Mushrooms: (Since I know how much you love  mushrooms-this
one's for you, baby! *grin*)  Freshly sliced mushrooms  and fresh crushed
garlic sautéed in butter and sweet basil until slightly  roasted served over
tender vermicelli pasta and topped with freshly grated  Parmesan cheese (the
real stuff; not that sheeyot in the can!) and freshly  ground peppercorn.
 
Enchiladas:  The standard fair with the Chef Jimmeh flair.  Your  choice of
beef, pork, chicken, or any other easily catchable animal you might  have
nearby (children excluded-I have a rep, you know!)
 
Breakfast Burritos (for dinner, silly): Large warm flour tortillas  filled
with scrambled eggs, fried potatoes, bacon, pepper jack and/or  cheddar
cheeses, sour cream, and hot sauce or salsa.  Your choice of  green or red.
 
Roasted Garlic Chicken:  A creamy roasted garlic and white wine  chicken
prepared using fresh cream, sweet basil, Parmesan cheese, crushed  black
pepper corn, and white wine served over egg noodle pasta.
 
Stuffed Bacon-Wrapped Chicken:  Tender boneless chicken breasts  sliced
edgewise and stuffed with a fresh, crushed garlic, sweet basil,  sliced
mushrooms, and butter mixture and then wrapped with bacon toothpicked  into
place.  Broiled to perfection.  Served with pasta and creamed  spinach
(spinach with mayonnaise, lemon juice, lightly salted and topped  with
freshly grated Parmesan cheese).
 
Burgandy Beef Roast:  A scrumptious beef roast prepared in a crockpot  with a
beef tomato stock, Italian herbs and spices, red Burgundy wine,  potatoes,
carrots, onion and garlic.  The aroma alone will have you  drooling until
dinner time!
 
Southern Fried Cube Steak:  Beef cubed steak coated with a delicious  spiced
batter and fried until tender juicy.  Served with mashed potatoes  and
homemade gravy.
 
Beef & Cheese Manicotti:  Beef manicotti stuffed with seasoned  ground beef
and Mozzarella cheese and covered with marinara sauce baked until  perfection
and then topped with lots more Mozarrella.  Served with  broiled toasted
sourdough garlic cheese bread.
 
Shrimp Creole:  A delicious Cajun creole soup made from a tomato beef  base
with picante stewed tomatoes, onion, garlic, green onion, plenty  of
Rosemary, red peppers, and larger tiger prawns served over angel hair  pasta
and warm sourdough bread loaf for dipping.
 
Jim-Ka-Bobs:  Shish-ka-bobs with everything but the kitchen sink  basted in a
delicious teriyaki sauce and grilled on the BBQ (tri-tip cubes,  prawns,
pineapple, bell peppers (all colors), new small potatoes, onion  wedges,
cherry tomatoes, etc.)
 
Tequila Lime BBQ'd Steak:  Juicy, tender ribeye or New York strip  steak
marinated twice for an exquisite flavor finished off with a tequila  lime
basting and BBQ'd just the way you like it.  Served with baked  potato,
pasta, and broiled garlic sourdough mozzarella cheese bread.
 
Fried Tilapía:  Grilled, seasoned fresh Tilapía fish fillets topped  with
fresh pico de gallo, lime and sour cream.  Served with spicy  frijoles topped
with fresh pico de gallo, cheddar cheese, and hot sauce and  sweet corn cake.
 
Curried Prawns and Rice:  Fresh tiger prawns seared in a hot Madras  red
curry, toasted fresh garlic, and butter sauce, served over Jasmine  rice.
 
Smoked Stuffed Chicken:  Broiled boneless, skinless chicken breasts  stuffed
with smoked ham, mushrooms, garlic, butter, and basil.. topped with  smoked
Gouda, mozzarella, and freshly grated Parmesan cheeses and drizzled  with
Alfredo sauce made from scratch (butter, cream, basil, garlic, and  Parmesan
cheese).  Served with linguini or fettuccini pasta topped with  Alfredo sauce
and freshly ground black pepper.
 
Goulash:  (Classified recipe) Woot woot!
 
Stir Fry: (any way ya want it; preferably Szechuan!)
 
Sides:
 
-          Deep fried Lumpia  (Filipino-style egg roll): Ground beef, roasted
ground pork, bean sprouts,  shredded carrots, chopped cabbage, onion,
scallions, and a variety of  delicious sauces, wrapped and deep-fried served
with sides of sweet and sour,  chilé sauce, and soy vinegar.
 
-          Cream cheese filled  deep fried wontons with a side of sweet &
sour sauce
 
-          Creamed spinach w/  parmesan
 
-          Sautéed sliced  zucchini, mushrooms, fresh garlic and covered with
spicy salsa and grated  pepper jack cheese melted into layers.
 
-          Lemon pepper egg  noodles
 
-          Deep fried  mushrooms stuffed with cheese (and, crab or shrimp, if
preferred)
 
-          Foil wrapped  potatoes on the grille with diced yellow onion,
bacon, butter, and salt and  pepper until tender and slightly caramelized.
 
-          Artichokes with  mayo and/or melted butter
 
-          Brussels sprouts  (cuz I know they're Jen's fave.. ha!)
 
-          Broccoli,  cauliflower, or asparagus with cheddar cheese or
hollandaise sauce
 
-          Etc.
