That was going to be my suggestion too, there is a huge variety of that sort of shelving available and of varying grades to very substantial. Alternately, you could build free standing units, this is not necessarily cheap but it does preserve the paneling in the event you don't always want shelves there.
Drywall and plaster can always be patched and repainted but the paneling will remain more holy than righteous. Building I would recommend nothing less than three quarters plywood and you might like to use solid wood to form face frames or apply that edging to cover the edge of the wood. Not cheap but you can customize for a good fit.
