I gather that your grinder consists of a coupla blades mounted directly on the shaft of a high-speed motor. I think that what you want is a machine that uses a "burr" which is geared down to run fairly slowly but has immensely greater grinding surfaces and produces less heat and thus retains more of the essences that make coffee taste good. I googled the subject and there's more info than I cared to peruse, but it's there.
