I wish I had gotten rid of my popcorn ceiling before I moved into
this house. I looked into having it done, and it is possible to save
the sheetrock.

There are companies that will come in and do it. The spray a
chemical onto the ceiling that makes it turn loose, then the scrape
it all off. I asked how they keep the mess off of everything, and
the said they have something like a gigantic plastic sheeting funnel
that they tape up around the top edges of the room, and they go into
the funnel through a little opening to do the job. Afterwards they
just bundle up this funnel and take it away.

Unfortunately, this procedure is a bit expensive, and after it's done
it's up to you to texture and paint yourself, or find someone else to
do it.

Awhile back I did see a spray at home depot that supposed loosens the
popcorn so you can scrape it off, but I noticed it's a hand pump. Who
would want to hand pump spray thousands of square feet of ceiling? A
lot of people in my neighbourhood just took a large scraper and got
off what they could before repainting. It's a bit rough, but not
nearly as disgusting as the dust and cobweb collecting popcorn!

Oh yeah, and if you have an older home, you definitely shouldn't do
it yourself. The stuff is known to contain asbestos!
