My message snuck out before I was finished.
Yes, hot water rises within the surrounding water as hot air rises within
the surrounding air because being hotter than the surrounding water or air it
is probably less dense than the surrounding water or air.
Heat moves throughout matter until everything is the same temperature. In
the case of this hot water heater I believe the greatest heat loss would be
through the metal pipe into the surrounding air. Lengthening the path from the
hot water heater to the point on the ceiling by adding an inverted U or elbows
as proposed would only expose more surface area of hot water to the air
resulting in a greater heat loss. Again I would just insulate the straight hot
water pipe.
