What we do out here is to use the back of the axe head to flog the bark
which splits then  using the front of the axe prize off the bark.

This works extremely well with fresh cut logs,  we used to do this a lot
when fencing the mates property.

If you have a seven pound hammer handy use that,  for after removing the
bark we used to split the logs up for split fence posts.

This works well for Gum and Iron Bark, but if you are trying to remove bark
from a Paper Bark Tree just cut into it with a sharp knife and you can peel
of large sections easily.
