Aloha Shane, Wow! What a great project. My friend in northern California has been considering a straw bail house. Apparently, the walls are very thick compact straw and then coated with some sort of product like stucko. I don't know much about it, but she said that the straw is so compact that it won't burn. I asked for more information, but she suggested that I just go online and check it out. She lives in an area where they do get some snow in the winter, and the summers can be quite warm. Good luck.
