Mike, those crystal ovens are usually dirt simple - just a thermostatic switch 
(set to open when the temperature exceeds the desired operating temp) connected 
in series with a heater.  You apply the rated voltage, the heater turns on 
until the temperature goes above the set temp and then the switch opens, heater 
turns off, oven cools down, thermal switch closes, etc, etc.  Should be easy to 
eyeball and to use a VOM to figure out what is going on.  Or maybe not.
