I'll definitely help where I can. Doug knows a lot more than I about packaging/installing, he may have hints here. Also there is this page:

Not sure how up to date that page is. In CMake 2.6 there is support for frameworks. The working example is in Test/Frameworks within the CMake source code. I am taking a look at it now to see if I can quickly convert one of my own projects..
