Well, the first point I can think of is that no one is kicking us out
at 9:30. The obvious counter argument is that people may not be
expecting to be there more than two hours, and may have other
plans. (even if the plans are to get home, get some sleep, and be able
to get to work and without being groggy.) and my response to that
would be that if people can easily be bumped if things are late and
people are going home.

In music, many performances now are set with playlists that include as
 two predetermined encores that a re pretty much expected to be
played. I never gave much thought to them until one time when I saw a
concert by Jaco Pastorius. It was a phenominal concert, (he was a
phenominal musician) After the standard sets were done, he did encore
after encore. The crowd kept cheering and he kept coming up with more
things to play. Eventually it came down to grabbing random percussion
instruments and doing a conga line up and down the aisles of the
auditorium.  What he pretty much seemed to do was that as long as
people kept applauding, he'd keep on coming up with things to play.

I guess I'm trying to say don't worry about having too much
material. Either people will be interested and stay or have enough and
leave, and if we don't get to it tomorrow, we have material lined up
for next time.
