When in your inbox, press space with f on a BT keyboard, or read with f on a QT. You will be asked which detail you want to search for. Type s for subject and press enter. Then type in part or all of the subject you want to search for and press enter. This isn't exactly sorting the whole inbox by subject, but it's a good work-around.
