Your first problem posed an interesting puzzle, and I love solving puzzles.
(Besides, it beat trying to write my next chapter for NaNoWriMo. *grin*)
Here's what worked for me.
First, you're experiencing the double spacing in-between paragraphs because
of how the BrailleNote is back translating your document from Braille. To
solve this, start from the Main Menu, and press F for File Manager. Then
choose T for Translate File. Once in the Translation Menu, pick B for Back
Translation Options. Now you're in the Braille to Text Translation Setup
List, and if you can say that five times quickly, you'll when a prize.
There are several interesting options you can check out here, but the one
you need to change is "Paragraph Format?" The default, as you will have
guessed is two lines, but you can change this by entering one line return,
entered by pressing Space with Dots 2,6. Exit by pressing Space with E, and
confirm your changes by pressing Y.
In the test document I brailled, I used a new line followed by a tab, Space
with T, to create a paragraph. After making the above change in the
Translation Menu, I saved my Braille file, Space with S, and converted it to
Microsoft Word, Backspace with X until the Word option appeared, and gave it
a different filename from the original Braille document. When I opened the
file in Word 2003, paragraphs were shown as a new line and tab.

Hello all,
Some questions my professors brought up recently got me thinking.
When I export a document from braille to Microsoft Word, I think the
formatting is just fine. However, some of them have a problem with the
fact that there is a two-line space between my paragraphs. I don't
write the file that way in braille; it comes out that way once it's
been translated. Is there any way to prevent this from happening?
Secondly, I am an extremely fast typer. Sometimes, while I'm
typing, my spaces will get mixed with in. For example, I'll end up
hitting space with a, and moving up a line as I continue typing. Is
there any way at all I can keep whatever I'm typing appended to the
document, so that I won't risk jumbling everything up by accident?
