One cannot, unfortunately. If they are in trash you can get them back, but once you erase them from there they are gone, period. This is another reason I use the GMail website - even trashed emails stick around for 30 days before being automatically erased, so I can get at them if I realize, even a month after deleting an email, that I needed it.
