First, turn on bluetooth on the apex. Once it is on, exit the connectivity menu; do not scan for, or pair with, the iPod. Return to the main menu, hit t for terminal, and select the bluetooth port.
On the iPod, select the apex from the braille settings under the vo item in general and tap connect. Quickly enter 0000 (four zeros) and tap the pair button, which is a bit below the upper right corner of the screen. You only have a few seconds to do this, but you will only have to do it once.
