To get to one-handed mode, press backspace while switching on and press enter while switching on to get back to two-handed mode. I personally don't use one-handed mode very much, occasionally when I'm trying to do a couple of things at once or when really necessary. I tried it once last year when I jammed two of my fingers in a car door on my left hand. That took quite a bit of healing and I couldn't read properly for quite some time. I tried typing, but couldn't do it properly, so I decided to try the one-handed mode. While I appreciate the mode, I must say it was difficult in typing, it was much slower so I didn't use it that much. I'm much better at reading braille with 2 hands instead of one. The braille felt funny on my jammed fingers at the time. I couldn't even make sense of it. Oh well. These things unfortunately happen. I'm back to using two-handed mode and back to making much more sense with braille! Personally, one-handed is great for things like taking a quick note, but it is challenging for writing long documents. For example, I didn't use that mode while taking notes in lectures. The lectures were recorded for everyone in the class so that was handy and I used the recordings in taking notes when my hand recovered.
