The iPhone/iPod will usually redirect to the mobile version of a site.
Nowadays, though, it is increasingly common to find iOS specific sites
to which any iOS device will be redirected. I am not sure if there is
a way to change it so the iTouch loads a full version of a site, but I
don't think so.
If you use an iPhone as a hotspot, and open sites with Keyweb, then
things will behave normally; the site doesn't care that you are using
an iPhone as a router, it only cares that the site is being viewed on
a mobile device.
