Hello. No, you do not have to modify the documents. The Apex will read it as is. If they are entirely in Spanish, then when they are opened on the apex they should be opened as Spanish files. Since they are in word the apex will ask if you want to review the options. say yes to this prompt. I recommend that you do not translate into braille. It will ask what language the file is in. When Spanish is indicated, it should read the document with the spanish characters. Also, make sure that the Spanish language is enabled in the utilities menu.

No. The router does not work on bluetooth. It works kind of like
a wifi router you would see in a house.

To add to that, to connect to the iPhone over wifi to use its
internet connection on the apex, you would do that from the
wireless internet menu on the Apex.  You do not connect in the
bluetooth menu like you do when you are trying to use the braille
terminal.
