Oh it's easy to add a sender to your addressbook even in 5.1. When you're when 
you have the message highlighted go to the from field and press control c. You 
will hear entry coppied to clipboard. Then go to you addressbook type in a 
first and last name, then go to either home or business email address and press 
control v then either control enter or escape, they do the same thing.
at this point.
