Michele, you have to save every email address you want in the address list manually via the add address function, but when they're there, you can, at the to field prompt in the email, just press backspace with l, space down to first or last name and start entering the name. When you have entered enough characters for identification in your list, you can press enter and all the records of that person or entity will be selected, from which you can then enter on the one you wish to use.
To answer your greater than query, I haven't done this on my bn but on my pc it works, to substitute the greater than sign with a space in the pronounciation dictionary. You should just remember this when you want to use your calculater, because, as far as I know, the bn's pronounciation dictionary could not be defined for specific applications.
