Christmas Morning Apricot Scone Wreath
holidays, quickbreads
2 1/2 cups all purpose flour
2 tbsp sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter; cold, cubed
1 cup buttermilk
2 tbsp buttermilk; see note
2 eggs
1/3 cup apricot jam
1/2 cup walnuts; toasted, chopped finely

1/3 cup icing sugar
1 tbsp orange juice
Make a festive wreath with a circle of pinwheel style biscuits rolled with
sweet jam and toasted nuts.
- Line large circular baking sheet with parchment paper; set aside.
- In large bowl, whisk together flour, sugar, baking powder, baking soda,
and salt. Using pastry blender or 2 knives, cut in butter until mixture
resembles coarse crumbs. In small bowl, whisk buttermilk with one of the
eggs; add to flour mixture stirring with fork to make a soft ragged dough.
(Note: I added the 2 tbsp extra buttermilk as the original recipe was too
dry.)
- With lightly floured hands, press dough into ball. On lightly floured
board, knead gently 10 times. Roll out to a 10 x 16 inch rectangle. Spread
with jam, leaving 1/2 inch border at one long side uncovered. Sprinkle with
walnuts. Starting at covered long side, roll up dough; pinching edges to
seal.
- Using serrated knife, cut into 1 inch thick slices. Arrange, cut side up
and overlapping, in 9 inch circle on prepared pan. (Make ahead note: Freeze
until firm. Wrap in plastic wrap then heavy duty foil; freeze for up to
one week. Unwrap and return to baking sheet; thaw in refrigerator and add
10 minutes to baking time.)
- In small bowl, lightly beat remaining egg; brush over wreath. Bake in
center of 400�F oven until golden, about 20 - 25 minutes. (Original recipe
said 15 minutes, but they were not done in that time.)
Glaze: Meanwhile, in a small bowl, whisk icing sugar with orange juice;
drizzle over warm wreath.
