Spinach Spoon bread
1/2 cup butter; melted
10 oz. pkg. frozen chopped spinach; thawed, squeezed dry
2 green onions; sliced
1 red bell pepper; diced
5 1/2 oz. cornbread mix
4 eggs; lightly beaten
1 cup cottage cheese
1 1/4 tsp. seasoning salt
Spray inside of crockpot with cooking spray. Combine all ingredients in a large
bowl; pour into crockpot. Cover and
cook on LOW for 3-4 hours or on HIGH for 1 3/4 - 2 hours until knife inserted
into the center comes out clean.
