Banana Fruit Loaf

175 grams white self-raising flour -- (6 oz/l-1/2 cups)
75 grams soft brown sugar -- (3 oz/1/2 cup)
125 grams dried fruit -- (4 oz/1 cup) (mixed sultanas and candied
peel)
1 egg -- beaten
2 bananas -- mashed well
Mix the flour, sugar and dried fruit in a bowl. Add the beaten egg and mix. Add
the well-mashed bananas. Mix thoroughly until very soft.
Press the mixture into a greased and half-lined 450 g/1 lb loaf tin. Bake at
190°C/375°F/gas 5 for 45 minutes. Cool the loaf in the tin and then put it on a
wire rack.
