Thanks for the welcome. I would love the recipe and am envious that
you mill your own flour. Also my biggest problem at the moment is how
do you cut your bread. I use a breville slice guide

Glad to meet you and welcome to the group!  

I live in northeast/north central Texas and it gets hot here too.  But not 
right now.  While you're enjoying summer, we are in our winter.  Yesterday it 
got up to 81F, but last night a cold front came through and today it is only 
going to be in the 40's.  By next weekend we are possibly looking at lows in 
the lower 20's.  Yuck.

I too make bread using the machine to do all my kneading for me.  Then I take 
the bread out of the machine, form it into a large loaf and bake it.  If I want 
two loaves for the day I then stick another batch in the machine.  We only eat 
whole-grain products and I mill my own flour.  If anyone is interested in a 
100% whole-grain whole-wheat bread I would be happy to share my recipe.  It 
makes a 1 1/2 lb. loaf and my grandchildren won't even eat store-bought bread 
anymore.
