Banana-Mincemeat Bread
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup granulated sugar
1/2 cup shortening
2 large eggs
1 cup mashed ripe bananas (2-3 bananas)
1/2 cup sour cream
1 (9-ounce) package condensed mincemeat*, crumbled
Place rack in lower half oven; preheat oven to 350 degrees F (180 C).
Combine flour, baking powder, and baking soda.
In a large bowl mixing bowl, beat sugar and shortening until fluffy.
Add eggs, bananas and sour cream; mix well. Stir in flour mixture and
mincemeat. Spoon into a greased and parchment paper lined 9x5-inch
(23cm by 13cm by 7cm in height) loaf pan. Lightly grease parchment
paper also. Bake for 60 minutes or until wooden toothpick inserted in
center comes to out clean. Cool for 10 minutes; remove from pan. Cool
completely.
