Apple Bread
It's getting to be apple season here in the Mid-West and this is one of my
favorite recipes.
BREAD:
1-1/4 c oil
3 eggs
2 c sugar
2 t vanilla
3 c flour
1 t soda
1 t salt
3/4 c pecans, chopped
3 c chopped apples
ICING:
1 c brown sugar
1/4 c milk
3/4 stick butter
BREAD:
Beat together oil, eggs, sugar and vanilla, then add flour, soda and salt.
Blend mixture and add pecans and apples (it will be very thick). Bake at
350 for 1 hour or until toothpick comes out clean.
ICING:
Cook to bubbling; boil for 3 minutes and pour over bread while warm. Remove
bread from pans after 2 hours.
YIELD: 2 loaf pans, 10-1/4 x 3-5/8 x 2-5/8 inches
