11.5 is fine but there is no reason to set it higher than how we set the
machine up which is at 11.  On machines with Rotary pumps it just acts as a
safety relieve valve, it has no other function.  The brew pressure is set
by the bypass on the pump. We do set them to 9 bar but 8.5 is also fine.
