Looking at it again--with single PID, I'm guessing the set point for brew was 
around 205, and the boiler settled at 205ish and the group at 183ish.

With dual PID, it looks like the set point for brew might have been closer to 
217, and the boiler settled there, whereas the group stabilized to a bit north 
of 183, maybe 188 or so.  Presumably because of a more stable temp in the steam 
boiler, and thus the HX?

Anyway, this all makes me remember the guys who drilled a pf and installed a 
probe so they could measure temp at the screen and really dial things in. I 
don't recall whether the final consensus was to hit 204ish at the screen for 
the best shot or something else. Perhaps I'll have to go dig up those threads.
