Most of my books on Asian history are on Japan, but I have one very good book 
on China titled : Chronicle of the Chinese Emperors; The Reign-By-Reign 
Record of the Rulers of Imperial China.   
ISBN 0-500-05090-2
It is hardcover and "weighs" a lot.  O^_^O  BUT it allows you to follow what 
made China Chinese and you can see how leaders and events changed it over 
time.

Another good book is: The Far East; A History of Western Impacts and Eastern 
Responses, 1830-1975.   By Paul H. Clyde/Burton F. Beers.  A nice general 
book, it starts where Europe is starting to change Asian culture and might 
not be what you are looking for (unless you wish to see how modern Asia 
became what it is today or in the 70s anyway).

I could suggest more, but they focus on certain areas of Chinese culture.
