I'm not sure if they use liquid nitrogen. They are quite cold, for sure, though. They were almost too cold to get much taste out of them, the time I tried them.
The microcrystalline ice cream in the PopSci article sounds much more appetizing; I wonder if it'd be possible to mass-market it?
