You are overgeneralizing, William. Yes, there are fundamentalist Muslims who
would like to see that kind of Law accepted, but they are a small minority.
Most Muslems are decent and moderate people who want a civilized society,
just like you do, and who believe that practices such as stoning, beheading
etcetera are horrible practices.

If you condemn Islam because of such barbaric practices, then you must also
condemn Christianity because of the Spanish Inquisition, the burning of
witches at the stake, the forced conversion to Christiany ("convert or die",
or even worse "convert and die anyway, but at least then your soul is
saved").

Every religion has its fundamentalists. You condemn Islam because of the
beliefs of a fundamentalist minority. Do you also condemn Christianity
because of the extremist few among the Christians who want the whole world
to be ruled by the extremists' interpretation of Christian Law?
